Thai Style Swimming Scallops 

Ingredients:

2 pounds of swimming scallops (fresh or IQF)
2 tbsp of Vietnamese or Thai Fish Sauce
2 cans of coconut milk
2 tbsp finely chopped fresh ginger
2 tbsp chopped cilantro
2 tsp of ground red Thai pepper

Directions:

Sauté coconut milk, fish sauce, ginger, and pepper on medium high until sauce thickens. Add frozen or fresh scallops and cook 5-6 minutes or until scallops open.

Stir scallops into sauce then sprinkle with chopped cilantro and serve with steamed rice or crusty bread.
